Millet, Pan, Ugali

I ate Ugali (or Pan in someplace) for the first time on Sunday.  It is similar to gritz but with less sauce.  When I told the church members that we don't have Millet in Madagascar they were keen to have me learn to cook this dish in order to take it back to Madagascar.


Step 1: Boil the water
Step 2: Add a scoop of Millet and stir
 Strp 3: Add a second bowl of Millet and stir
 Step 4: Add the final bowl of Millet so there is no water left.
 It was hard to stir by this point because the paste was quite thick.
I learned quickly that the women have strong arms.
 Step 5: Smooth into a paste.
 Step 6: Spoon the Ugali into a bowl and serve.   
Now that I know how to cook Ugali I have been told that I am marriageable.  
I thought this was worth writing home about.
The basket below is especially woven to keep the Ugali warm. It can be placed in a corn in the back of the oven after being cook so it stays warm until the rest of the food is ready.
